Spinach and Mushroom Quiche

Ingredients

  • 6 large eggs

  • 5 oz spinach

  • 1 tbsp garlic

  • 1 & 1/2 cup chopped sweet onion 

  • 8 oz mushrooms

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees F. Coat a pie pan with cooking spray. 

  2. Heat oil in a skillet, add mushrooms and cook until tender. Add onion and garlic, cook, until softened. Add spinach and cook until wilted. Remove all veggies from heat.

  3. Whisk eggs, milk, salt, and pepper in a bowl. Fold veggie blend and cheese into the bowl.

  4. Pour everything into the prepared pie pan and bake until set and brown, about 30 minutes.
