Baby Kale Salad with Apples, Feta & Nuts with Lemon-Olive Oil Dressing

Ingredients
3 bags kale leaves
4 oz feta cheese
1/2 cup nuts (sliced walnuts or other nuts)
2 red apples, diced with a squeeze of lemon on top
3/4 cup olive oil
1/4 cup lemon juice
1/2 tsp salt
1/4 tsp black pepper
Instructions
Tear kale into very small pieces off of the stems.
Massage kale gently with 1 tablespoon olive oil on your hands to soften the kale.
Add cheese, nuts, and apples to the bowl- set aside.
In a separate mixing bowl, combine olive oil, vinegar, salt, and pepper. Stir or shake to combine.
Toss salad in half of the dressing and serve immediately.
Extra dressing may be stored in refrigerator for 3-5 days in container with lid.
